MEXICAN ENCHILADA SAUCE - PART I
An Opportunity to Diversify
Prior to 1994, Pedro Pasta Company manufactured their own tomato sauce for the Mexican-style enchilada they sold in their restaurants. After careful analysis, they decided to explore outsourcing the sauce. They believed that this approach would reduce sauce manufacturing and employee training costs. Thus, they approached Ralph Goddard, the founder and President of Food Brokers Inc. (FBI), for assistance in identifying a supplier of a ready-to-use (RTU) Mexican enchilada sauce. Ralph immediately turned to Milano Foods since they had the capacity and most of the technology required for a project such as this.
