Research Interests:
 My research program at Penn State focus on problems related to dairy products processing.  Current research projects include studying the production of exopolysaccharides by Lactobacillus delbrueckii subsp. bulgaricus, the potential of colicins as biopreservatives in fermented dairy and nondairy foods, and developing an understanding of the effects of various processing parameters on the structure and sensory attributes of ice cream.

I am a member of both the Microbial Food Safety and Ingredients as Materials impact groups.
